When I found that most soy sauce contains wheat, I was devastated! Most of my old recipes called for this savory miracle worker, and I had to ban it from my diet. The Tamari gluten free soy sauce is fabulous option with no difference in taste, but I ran out tonight when I was making dinner.
In lieu of soy sauce, I found some fish sauce in my cabinets and added that instead. Fish sauce, or nouc mam, is found in many Vietnamese and Thai dishes. It is derived from anchovies, salt, and water, so it is completely gluten free! It worked perfectly for my stir fry, giving it the same savory goodness of soy sauce.
